The Cellar

Our cellar features Pooley Wines’ Heritage and Estate collections, complemented by a curated selection of Coal River Valley vintages, distinguished Tasmanian wines, and exceptional international wines and spirits — honoured on Australia’s Wine List of the Year 2023.

The sandstone cellar at Prospect Country House was constructed in the 1830s by James and Elizabeth Buscombe, among the early free settlers of Richmond. Built with the labour of 21 assigned convicts, it served both as living quarters for those men and as storage for provisions, rum, and household goods in a cool, secure environment—a vital feature for a property of its scale at the time.

The Buscombes, successful merchants and innkeepers, built Prospect as both a family residence and a statement of prosperity. The cellar reflects their foresight, practicality, and the realities of colonial life, where housing convicts, preserving food, and safeguarding supplies were essential to comfort and survival.

Nearly two centuries later, the cellar remains one of the most significant features of the house. It stands as a tangible link to the Buscombes’ legacy, to the ingenuity of early colonial construction, and to the convict stories embedded in the very foundations of Prospect.
